I present to you, my cookie crisp caramelly banana yogurt parfait; literally heaven in a glass.
Although this has become one of my favourite breakfasts, I would also serve this for dessert...or a snack...or even dinner (don't deny that you wouldn't love this for dinner)!
You will need:
- 150 g yoghurt (soy, coconut, 0% greek etc.)
- 1 medium banana
- 2 medjool dates
- 1tsp cacao
- 2tsp coconut sugar
- 1tsp cacao nibs
- 2tsp melted smooth peanut butter/ almond butter
- cookie crisps to decorate (optional)
I'll go through this layer by layer as it will make the recipe easier to follow!
Bottom Layer: 100g yoghurt - you can use any yoghurt you desire for this (soy, coconut, 0% greek)
Second Layer: banana slices (I used 1 medium banana for this)
Third Layer: date caramel - soak 2 medjool dates in hot water for a couple of minutes, drain, mash and slowly add back in some of the water until you achieve a caramelly consistency.
Fourth Layer: mix 50g of your choice of yoghurt with 1tsp cacao, 2tsp coconut sugar and 1tsp cacao nibs (and some mini cookie crisps to decorate)
Topping: heat 2tsp smooth peanut butter (or almond butter) in the microwave/ over the stove until melted. Drizzle half of this over the parfait and mix 1/4tsp cacao into the other half before drizzling this over too! Top with cacao nibs to finish off.
