Zesty Celebration Cake + Organic Burst: Super-Duper Foods

Hi Everyone! Hope you are all well on this fine Saturday! I am! Just got my uni results and I now have a degree in Graphic Design! whoooo!

Anyway! Getting on with this post, today I want to talk to you about Organic Burst. In case you have been living under a rock or aren't on instagram, Organic Burst are a british company that produce a range of Superfood supplements, each with unique qualities to boost your health!

I am in love with these products. As well as adding a superfood burst (and a variety of health benefits) to recipes, they each add a unique flavour. It is one of those ingredients that you have always done without before but once you use them, you couldn't imagine your oats/ bakes/ smoothies without them! 

I thought I would do a little round up of some of my favourite Organic Burst products and recipes using them! Keep checking back because this post will be constantly updated, I can assure you of that! 


Let's begin with a superfood I had never heard of before but is now one of my favourites!

Baobab is a pure, raw and organic fruit powder from the Baobab tree aka. the Tree Of Life.

• Baobab has a high 50% fibre content!
• Contains more Vitamin C than oranges - this revitalises and invigorates; boosts the immune system; 
  promotes radiant and youthful skin; makes you feel alert and concentrated.
• Contains more Iron than red meat, perfect for vegans!
• Contains more Calcium than milk, again perfect for vegans!
• Contains more Potassium than bananas, for maintaining a healthy nervous system
• It is high in digestive enzymes, promoting a healthy digestive system.

For optimal results, baobab should be taken 1-2tsp a day. 

So far, I have one main baobab recipe to share with you but I have also tried this just mixed with water (1tsp per small glass) and also mixed in with fresh peach juice as well as mixed with porridge! Gives it a deliciously tangy taste!

This cake is low fat, low sugar and full of health benefits thanks to the added Baobab! This gives it such an unusual but pleasant tangy taste, a perfect compliment to the sweet apricots. Recipe video will be posted soon!


For the Cake:
- 1/2 cup wholewheat flour
- 1 large very ripe banana
- 1/2 tsp vanilla
- 1/2 tsp bicarbonate of soda
- 1tbsp agave
- 2tsp coconut oil
- 1tbsp flax egg
- 3 moist dried apricots (you NEED these for this cake)!
- 1tbsp baobab
- 1tsp grapefruit zest

For the Filling:
- 1 banana
- 1 tsp apricot jam
- 1/2 tsp baobab
- grapefruit zest

For the Topping:
- 100g 0% greek yogurt
- banana slices, grapefruit rind and zest + apricots to decorate.

This makes a mini cake! The cake tin is around 10cm diameter.


1. Sift together the flour, vanilla, bicarbonate of soda and baobab.

2. In a separate bowl, mash the banana and mix in the oil, agave and flax egg. Thoroughly combine.

3. Fold the dry ingredients into the mixture, adding in the apricots (chopped) and grapefruit zest.

4. Pour the mixture into a greased tin (mine was around 10cm in diameter but you could also use a small loaf tin or make mini muffins). Bake in a preheated oven at GM 4 | 180C | 350F for 30-40 minutes, keeping an eye on it. Take out of the oven once risen and browned and a knife inserted in the centre comes out clean. Take out of the tin and leave to cool for 15 minutes before cutting through the centre with a serrated knife. 

5. For the filling, mix together a mashed banana, baobab + 1/4 tsp grapefruit zest. Spread the apricot jam onto one half of the cake and top with the banana mixture, spreading all over. Top with the other half of the cake.

6. Top with greek yogurt (or cashew cream or more banana mixture for vegan) and grapefruit zest, banana slices and dried apricots to decorate!




Wheatgrass has a pleasant taste, great for both sweet and savoury dishes!

Wheatgrass is well known for it's cleansing and detoxifying properties.

• Detoxifying and cleansing: The high levels in chlorophyll in wheatgrass works to purify and
  remove toxins, whilst the dietary fibre cleanses the digestive tract.
• Strengthens the Immune System: The vitamins A, C + E in wheatgrass support the immune system.
• Energy boosting: the high levels of vitamins, minerals and enzymes in wheatgrass help promote
  levels of energy in the body.
• Healthy skin, nails and hair: Vitamins A, E and essential omega acids in wheatgrass help to promote
  healthy skin and strong nails and hair.

For best results, Wheatgrass should be taken 1tsp a day.

Wheatgrass is great in green smoothies and juice and mixed in with yogurt parfaits. I've also found it perfectly compliments other ingredients in my creamy zoodle sauce:


A funny story goes with this dish. Well, it's funny now that I think back to it. I sat my dinner outside and ran in to get my camera and ran back outside only to see a crow swoop away, a tomato gone and a few remnants of veg left lying on the ground. It must've been good!


- 2 courgettes, spiralized
- 1 carrot, spiralized
- small handful cherry tomatoes, quartered
- 2 mushrooms, sliced
- 1 spring onion, sliced
- a handful fresh parsley
- 1/4 avocado
- 1tsp sweet chilli sauce
- 1 level tsp wheatgrass powder
- 2tbsp soy milk or yogurt (depending how creamy you want it)!


1. Mix together the spiralled courgettes and carrots, tomatoes, mushrooms, spring onion and parsley.
2. To make the sauce, mash the avocado and mix in the sweet chilli, wheatgrass + yogurt/milk.
3. Mix everything together and enjoy!

You can see the tomato missing that the crow took!!! 


A simple quick energy booster!

Simply mix 1/2 tsp wheatgrass powder, 1tbsp yogurt and 1tsp agave/honey.



Berry nice ;)

The Acai Berry is a berry that is extremely beneficial for the skin and body and has one of the highest levels of antioxidants of all fruit and veg.

• Acai protects cells from free radical damage, even at low doses. A serving of Organic Burst Acai
  contains up to half of the antioxidant RDA.
• Acai helps with weight management by boosting metabolic rate. Vitamins E and polyphenols also
  help to speed up recovery after exercise.
• Acai reduces the effects of premature skin ageing by increasing the antioxidant capacity in the
  human body by three times.
• It boosts radiant and nourished skin due to the fact that it is rich in essential omega acids.
• It also helps to regulate cholesterol levels!

For optimal results, acai should be taken 4-8 capsules a day. 

Acai berry just seems to go with everything (well most things)! I have had it in porridge (just cooking  my regular oats with 2 acai capsules for a berry flavour) | with fruit salads (just perfect) | Mixed with yogurt and in parfaits | In cakes and bakes | In smoothies and 'nana ice cream ... it's just so versatile!

Like the wheatgrass one above, a simple energy booster for those who don't like taking capsules!

A simple way to get some well needed energy.. an organic burst Acai Capsule mixed with 1tbsp yogurt (you can use greek yogurt, coyo, soy yogurt).



Simply refreshing.

Simply cut up your favourite fruit (I used pear, banana, watermelon, apple, cherries, nectarines and peach) and mix in 1-2 acai capsules, fresh lemon juice, magic drops and orange blossom/ rose water.



Legend has it that before going into battle, Inca warriors took maca to increase their strength, stamina and endurance! This stuff is historically great!

Maca powder has a large variety and density of minerals and is used for energy, endurance and hormonal balance.

• Maca promotes healthy energy levels and is high in iron, fighting fatigue and tiredness.
• Maca strengthens the body and improves endurance and stamina during exercise.
• It's minerals support healthy bones and teeth.
• Maca stabilises hormone levels.
• It reduces the negative effects of stress (perfect for students during exam/coursework periods...this
  is from experience; trust me!).

For optimal results, maca should be taken 1/2tsp a day, gradually increasing to 1tsp after time. 

Maca has such a great caramelly, malty taste. It is great in baking, porridge, smoothies, with almond or soy milk (over ice or heated up) ... basically every sweet thing!

For the Crust:
- 1/2 cup oats
- 1/2 cup wholewheat flour
- 2/3 cup cooked apple puree
- 1tbsp agave/ honey
- 1/4 tsp vanilla
- 1/4 tsp cinnamon
- 1/4 tsp baking (bicarbonate of) soda
- 1/8 tsp salt 
- 1tsp organic burst maca powder (http://bit.ly/1lgoPTr)

For the Caramel:
- 18-20 dates

For the Topping:
- 100g 0% greek yogurt
- 1tsp agave
- 1-2 bananas


1. Place the oats into a food processor and pulse until you get oat flour. Add in the rest of the dry ingredients and pulse until combined. Transfer to a bowl and add the agave and apple puree. Stir until combined, adding more agave if needed. This may take a while! Once ready, roll into a ball of dough and press into a greased (with olive or coconut oil) pie tin. 

2. Place in a preheated oven at 375F | 200C | GM6 for 20-30 minutes until crispy and golden.

3. For the caramel, pit 18-20 dates. Place in a bowl and cover with boiling water for 5-10 minutes until the dates have softened. Place in a food processor/ high speed blender and pulse until you have a caramelly consistency. Pour into a bowl and put to the side. 

4. Thinly slice one large banana. Place slices on the pie crust. Top with the date caramel and more banana slices to decorate.

5. Mix together 100g 0% Greek Yogurt and 1tsp agave. Place in an icing piper (or just use a spoon if you don't have one) and pipe onto the pie!

6. Slice and enjoy!

To veganise this recipe, simply replace the 0% greek yogurt topping with home-made Cashew Cream... there's a really nice tutorial for this here.

Triple caramel, triple deliciousness!


1. Cook oats: to a pan add 1/4 cup oats, 3/4 cup water and 1 small mashed banana. Bring to the boil then stir continuously for 1 minute. 
2. Stir in 1tsp Maca powder.
3. Toppings:
     - 1 small banana grilled for 3 minutes
     - Date Caramel: soak 1 medjool date in boiling water for a few minutes, drain, mash then slowly 
       add the water back in (enough as needed), mashing until a caramel consistency is achieved. (Mix 
       in with the oats or serve on top.
     - Cinnamon
     - Cashew Butter (or any nut butter your heart desires). Yum!



Perfect for breakfast on-the-go.


1. Place 1/4 cup oats, 1/2 banana, 1tbsp water, 1/2 tsp Maca, 1tsp almond (or any other nut) butter, 2 soaked dates, 1tsp wholewheat flour and a few nuts of your choice, raisins and dried mulberries (if you have them) in a food processor. Pulse until combined but still a bit chunky.

2. Mix in vegan chocolate chips if desired (let's face it, they're always desired), spread on to greaseproof paper/ tinfoil and place under the grill for 5-10 minutes, keeping an eye on it to make sure it doesn't burn! 

3. Cut into bars, squares or use cookie cutters for fun shapes!
