I don't know about all of you but I love love love melon; it's such a great fruit to lead in the summer. Not only are they delicious and refreshing, melons are also full of fiber, decreasing the risk of heart problems; vitamin A for improving eye health and vitamin C for repairing body tissue.
When scrolling through Instagram the other day, I noticed a great idea by Emily Choo (Travel Eat Bake) for a Yoghurt Melon Bowl: a scooped out melon half filled with yoghurt and topped with fruit! As you should all know by now, I love my porridge for breakfast, even in the blistering summer heat so I decided to recreate Emily's idea with my own little twist: A Melon Porridge Breakfast Bowl.
All you will need for this is half/ a third of a canary, honeydew or gala melon (depending on the size of course), 1/4 cup porridge oats and any fruit/ dried fruit/ nuts/ toppings that you desire! It really is such a versatile recipe.
Simply scoop out the melon half, chopping up flesh along with any other fruit you want to add. It is also helpful to slice the base off if you want the bowl to stand; just make sure you don't create a hole!
Cook the porridge as instructed. I usually place the 1/4 cup in a bowl along with 3/4 cup water and cook in the microwave on medium for 2 minutes, stir then cook for a further minute. I stirred in a bit of water once cooked to cool it down a bit but you could just leave it for 5 minutes or so before pouring into the melon bowl.
Top with the fruit along with any other toppings you desire (nuts, seeds, honey, peanut butter, dried fruit...)
There you have it; an all in one breakfast that you can take on the go!
