Instagram Recipe: Healthy Apple Strudel Yoghurt Parfait

This recipe is delicious enough to be a dessert but healthy and nutritious enough to be a breakfast; take your pick!

Nutritional Info (this will vary depending on the specific ingredients you have used): 
120 kcal, 0.5g fat (0g sat fat), 15g (naturally occurring) sugars. 

All you will need is: 
• 1 apple (any red variety will do)
• 50g non-fat yoghurt (I use Greek yoghurt but for a vegan version use soy) 
• sprinkle of cinnamon 
• small handful cereal/ crushed ryvita (note my very accurate measurements...)
  1. Peel the apple, reserving the skin, and chop into chunks. Place in a microwavable container (with a sealable lid) and semi-cover with water.
  2. Seal and place in the microwave for 2 minutes on medium. If the apple is still firm after this time, put back in for another minute.
  3. Drain some of the liquid into your serving dish before adding the cinnamon to the apple and mashing with a fork. Add the yoghurt and mix together along with the reserved water until the correct consistency has been achieved.
  4. Top with the reserved apple skin (chopped into small chunks) and crushed ryvita or cereal (you don't need this but it makes the parfait taste like apple crumble)! You can also finish it off with a little apple heart if you're feeling creative ;)
