I've seen quite a few people do the 'What I Ate Wednesday' post so I thought I might as well give it a go! So here's what I ate yesterday... on Wednesday!
Be warned, half of these photos were taken on my iPhone so the quality's not great!
Right, in the morning I had branflakes-to-go (branflakes in a bag haha) which I ate on the bus as I never have time to eat before I go to uni. I also took my decaff coffee with me in my dubai flask, to keep my hands warm if anything else!
At uni, I only ate an apple as it was my short day and I was waiting until I got in for lunch...
which was a homemade frittata!
For this, I cooked a mixture of frozen peas and corn and chopped up carrot and courgette in the microwave for 4 minutes. Meanwhile, I whisked up an egg with a splash of milk, some garlic powder, sea sat, pepper and mixed herbs. I then drained the veg and put it in a small oven dish, pouring the egg mixture on top before cooking in a preheated oven at 180 degrees. It was lovely.
Between lunch and dinner I had various snacks, as I always do when I'm working on my uni work...when i'm bored, I eat.
Coffee
Options orange chocolate flavour hot chocolate...which I ate with a spoon. (I know my eating/ drinking habits are strange...I also always have 3 glasses of water with every meal. One just won't do).
Special K Blueberry Flavour Biscuit Moment...I don't usually eat snack/ cereal bars as they have so many ingredients but I got these while they were on offer just to try them as they are quite convenient to take to uni if I don't have time to make up something else...they are actually really nice.
My favourite snack ever... cut up fruit (either apple or pear...in this case a pear) with greek yogurt, water (trust me!) and cinnamon mixed in.
For dinner, I had a chicken stir-fry made with chicken cooked in water with lemongrass, shallots, ginger and garlic. I then added some frozen peas and corn followed by a large sliced/ grated carrot, julienned courgette, shredded cabbage and a small handful of buckwheat noodles. I let this simmer in the water for 20 minutes or so before finally turning up the heat and adding a splash of white wine vinegar. Yum.
After dinner, I had a square of my favourite dark chocolate (only one of the squares shown in the photo! haha) ...
...and another hot chocolate. I needed this to heat me up!
I also got my uni results through yesterday and I passed all of my modules!! I actually done really well on my psychology one that I wasn't so sure about so I was really pleased!! Anyway, away to watch Once Upon A Time...I still love this show!
