Right! It's been a busy festive season and now that it's finally winding down i'm going to start a new feature on my blog: Recipe of the Day.
I absolutely love cooking and am never content until i'm creating a new dish in the kitchen. I know I originally created this blog with the intention of it being mainly a fashion blog but I find it so much easier to write about food and recipes and I already have over 500 photos of recipes I have made! I will still continue to do outfits of the day and DIYs every now and then but, for this month at least, my blog will be prominently a food one. By all means though, if there is anything any of you want me to write about just leave a comment and i'll see what I can do. :)
Now to get into the recipe! Well recipes to be more precise today. These 8 dishes are ones I made for my families New Year Party. When I say party, it was basically just a few of my parents friends and their families and my 2 cousins and uncle who were over in Cyprus on holiday but it was still a really good night and everyone loved the food!
So here are 8 party/ finger foods that create a twist on the classics:
You will need:
- 1 red pepper
- 4 button mushrooms quartered
- 1 carrot cubed
- 80g frozen peas
- 80g frozen corn
- 1 small onion diced
- 80g small macaroni
- 2 large eggs
- 150ml semi-skimmed milk
- 50g cheese + 1tbsp parmesan (if desired)
- few slices lountza/ham diced (if desired)
- handful fresh chopped parsley
- salt and pepper
1. Cook pasta as instructed for 5 minutes. Meanwhile stir fry the mushrooms, onions and ham (if using) in a bit of oil before adding the rest of the vegetables to the pasta. Cook for a further 5 minutes and drain well.
2. Whisk eggs and combine with milk, seasoning, parsley and half of the cheese mixture (if using).
3. Divide vegetables amongst 12 muffin tins and add egg mixture to each. Top with remaining cheese and bake in a preheated oven at gas mark 6 for 15-20 minutes.

Divide and clean 1 large or 2 small iceberg lettuces. To make the Tuna Mayo, combine 1 drained can tuna in brine, 1 chopped spring onion, 1 large spoonful mayo, 2 spoonfuls sweet corn and freshly ground black pepper. Spoon ontop of each lettuce cup and serve with cherry tomatoes.
Nutritional information per lettuce cup:
45kcal, 3g protein, 2g fat 1g sat fat)

Crush 7 light digestive biscuits and divide amongst 10 small shot glasses (or slightly larger if you have). In a bowl, combine 200g light cream cheese, 200g 0% greek yogurt, 4tbsp caster sugar and a few drops of vanilla extract until smooth and creamy. Spoon into each glass on top of the biscuit layer and leave in fridge for at least 30 minutes. When ready to serve, top with whatever your heart desires! Some suggestions are: strawberry jam, fresh strawberries, pomegranate seeds, banana and caramel or maybe some of each!

In a shot glass:
Fill 1/3 with Baileys
Slowly pour Caramel Syrup over a spoon (we used Starbucks!), filling to 2/3s.
Fill up the remaining 1/3 with Kahlua, again pouring slowly over a spoon.
The layers should mix up and separate so that the syrup goes to the bottom, the kahlua in the middle and the baileys on top. Traditionally, each shot is sprinkled with crushed nuts but we missed this bit out!

Mini Veggie Fritatas -
These are an ideal party food; they are small and healthy but are still full of flavour and filling.
Nutritional information (with cheese and lountza) per serving [makes 12]:
90kcal, 6g protein, 4g fat (1.5g sat fat), 0.5g sugar, 0.2g salt
You will need:

Tatziki in Cucumber Cups -
a twist on the traditional 'veggie sticks and dip'
Cut 4 medium cucumbers into 1inch slices and scoop out the middle halfway down leaving a base. For the tatziki, combine 200g 0% greek yogurt, 1 small finely grated (seeds removed) cucumber, sprinkle of dried mint, dash of olive oil and juice of half a lemon. Season as desired.
Put a spoonful of tatziki in each cucumber cup and serve with remaining tatziki.

Pepper Hummus Boats -
another easy twist on the traditional 'veggie sticks and dip'
Slice up 1 large red pepper and 1 large yellow pepper and lay out on a serving tray. To make the Hummus, blend together 400g drained can chickpeas, 3tbsp water, juice of 1 lemon, 2 crushed garlic cloves, 3 tbsp olive oil, 1/2 tsp cumin and seasoning until a thick but spreadable consistency is achieved. For better presentation, put hummus into a piping bag and pipe a dollop on each pepper boat. Serve with remaining Hummus.

Pinwheel Sandwiches -
Not your traditional party food sandwich!
Nutritional information per pinwheel:
20kcal, 2g protein, 1g fat (0.5g sat fat)
Roll out 6 slices of brown bread (with the crusts removed) with a rolling pin until approx. 3mm thick. Spread each with an even layer of light cream cheese, lean smoked ham slices and fresh chopped parsley. Roll up into 6 long sausages and wrap with clingfilm. Leave in fridge for at least 15 minutes and chop into 4 before serving.

Tuna Mayo Lettuce Cups -
A bite-size way to enjoy this traditional sandwich filling!Divide and clean 1 large or 2 small iceberg lettuces. Cherry Tomato Halves and Mediterranean Cocktail Sticks -
You can't have Party Food without cocktail sticks!
For the Cherry Tomato Halves, half desired amount of cherry tomatoes (in case you hadn't guessed) and top with a small cube of feta or mozzarella cheese and a fresh basil leaf.
For the cocktail sticks, slice up some pickled peppers and thread onto a cocktail stick along with an olive and cube of feta cheese.

Mini Healthy Cheesecakes -
A twist on the traditional heavy dessert.
Nutritional information (with strawberry jam) per serving:
95kcal, 2.5g fat (1g sat fat), 10g sugar

My Uncle's take on the American Shots when you don't have any butterscotch schnapps!Fill 1/3 with Baileys
