Sorry about the 'broken record' title but I have just made a very banana-ey banana bread! I managed to use up 5 large bananas!
This was my adaptation of this recipe. The first time I made it, I forgot to add the sugar (oops!) but it still turned out great; a savoury bread that is nice for breakfast, lunch or after dinner!
So here is my go-to, extremely adapted but very easy banana bread!
You will need:
200g whole wheat flour
50g self-raising flour
1tsp bicarbonate of soda
1tsp cinnamon
Pinch of salt
2 eggs, beaten
500g mashed ripe bananas (this was 5 large bananas for me)
35ml rapeseed oil
Small handful of crushed nuts, dried fruit, both or neither!
1. In a large bowl, sift in the flour, bicarb, cinnamon and salt.
2. In a separate bowl, add the beaten eggs and oil to the mashed bananas and mix well.
3. Fold the dry ingredients into the mixture and put into a greased loaf tin. Bake in a preheated 180degrees oven for 50-65 minutes until risen* and golden.
4. Take out of tin and leave to cool on a wire rack.
*When I say risen, mine expanded 3 times it's size out of the tin!! It did go down in size a bit though when it had cooled!

And it's as easy as that! In case you hadn't noticed, this is a low fat, sugar free recipe!
